Easy No-Bake Chocolate Oat Cookies

chocolate bakesIf you are like me and love your Friday nights at home baking or cooking then you will like this recipe! It’s so easy, a bit of a healthier version of that chocolate chewy goodness from our childhood and even my boyfriend who can be somewhat picky at times really loved these! Great for kids too!

Ingredients:
•2 cups organic quick-cooking rolled oats (gluten free if all natural)
•3/4 semi-sweet Cacao Chips (gluten free if you get the Ghirardelli or Sunspire brand)
•1 medium ripe banana (optional)
•1 tsp. vanilla extract (optional)
•2 Tlbs. organic raw honey (can get this at Trader Joes or other local health stores)
•2 Tlbs. of all natural peanut butter (can be found at most grocery stores)
•Fruit to pair it with (optional)

1. Mash ripe banana and mix in vanilla and honey.

2. Slowly melt the chocolate in the microwave (~2 mins). Stir until smooth and add in the peanut butter. Mix well.

3. Add chocolate mix to the banana mix and mix well. Add the rolled oats until they are all evenly coated.

4. Place a heaping tablespoon each into a non-stick, mini muffin pan. Press tops flat with a spoon and place in the fridge for about an hour to set.

5. Remove with a spoon when you are ready to indulge and add some fruit for color and taste if desired, yum!!

*Keep leftovers in the fridge for taste and freshness.

Yum!! Cheers to Mindful, Healthy Living

Calorie Blasting Alternatives to the Traditional Spin Class…

spinSpinning is one of my absolute favorite workouts to do. There’s nothing better than zoning out, breaking a sweat, listening to high energy tunes and burning approximately 500-600 calories in an hour — walking away from the class feeling incredibly productive and on top of the world!

Beside from the traditional spin class, there are alternatives to a more total body workout…Aqua Spin AND what they call the RealRyder.

I had the opportunity to try out a RealRyder class in Hoboken this past weekend and had a blast! The RealRyder was designed to fully engage the entire body for a functional riding experience. Having a background in biomechanical engineering, this was truly an exciting workout for me. RealRyder has developed a new kind of stationary bike incorporating biomechanical advances including three planes of motion which allows you to turn, lean and balance just like the real thing. Not only are you using your leg muscles but you are working your arms, core and balancing techniques. This is such a huge advancement to the traditional bikes.

I have yet to try out the Aqua Spin but find it very interesting. I can image trying to peddle a bike under water could be incredibly difficult and calorie blasting. Next stop, Aqua Studio in NYC!

Balancing Act…

balanceWhat I have learned in the last few weeks has had a huge impact on me. It makes so much sense and is very simple. Health is not just about one’s diet and fitness level alone but rather supplemented with a true balance in one’s relationships, career, social life, spiritually, finances, and education – a more holistic approach to bringing joy and satisfaction into one’s life.

Often times we are so focused on our outside appearance but how often do we actually sit down and evaluate the way we feel inside. Is our job stressing us out? Are we involved in toxic relationships? Have we lost sight of any spirituality that use to make us feel connected?

For me personally, I have spent the last few weeks reflecting on this and working to establish this balance. When I am stressed, I crave sugar. How can I control the stress at work and reduce my cravings for sugar? When I don’t sleep I tend to eat carbohydrates like they are going out of style (this is actually a very common response to sleepiness for that quick sugar rush). Many things can contribute to us overeating and ultimately regretting our food choices, but what’s at the core of that?

Listening to our bodies is the first step. Know that the way we deal with our relationships, careers, spirituality and so forth can ultimately affect our nutrition and fitness level. Be mindful of your habits and take note of how you feel at those particular moments. If you find yourself eating something unwarranted regularly, take note of it, this may be what your body wants but not what it needs.
